WELCOME to our blog! Our family began in August of 2000 when Jody and I were married and has grown into a family of 6! We have 3 beautiful daughters and 1 handsome son! This blog was created in January of 2006 for our family and friends and to serve as a scrapbook for our kiddos in the years to come! Jody is the youth minister at our church and I am a stay at home mom! Tasty Tuesday

Loaded Baked Potato Chowder

This is a super tasty recipe that is easy to make and costs less than $2 per serving to make!!!

Ingredients:
*3 large baking potatoes (skins left on)
*3 1/2 cups milk
*4 oz cream cheese, softened
*2 tbsp butter
*2-3 green onions with tops
*4 oz sharp cheddar cheese
*1 1/2 tsp salt
*1/2 tsp coarsely ground black pepper

Bake/Microwave potatoes until potatoes are easily pierced with a fork. Coarsely mash potatoes. In a separate bowl, whisk cream cheese until smooth, slowly add milk, whisking until smooth. Add cream cheese mixture and butter to potatoes. Microwave (in microwave safe bowl) on High 3-5 minutes. Add cheese, green onion (sliced), salt and black pepper until cheese is melted. Serve with toppings, bacon, sour cream or broccoli florets, if desired!
